    2 pounds of fresh pumpkin, I used the small pie pumpkin
    3/4 cup sugar
    3/4 cup vinegar
    2 sticks cinnamon
    5 whole cloves


needs to marinade overnight


peel the pumpkin, scoop out the seeds and cut into cubes.
blend the sugar with the vinegar and boil for approx 6-7 minutes
pour the marinade of the pumpkin & marinade overnight in the fridge
strain the liquid into a pot, add the cloves and cinnamon, boil again for 6-7 minutes.
remove the spices and add the pumpkin, simmer until the pumpkin turns transparent, then let cool. pour all into a container, cover, and keep in fridge.

Serving Size: hard to say, depends on how much you want, but 8 1/4 cup servings
