    2 lbs chicken breast, diced (Ground chicken is also good. Or chicken thighs. Whatever.)
    1 t ground cumin
    1 t ground coriander
    @ 1 qt chicken broth or substitute

    8 or 9 fresh tomatillos, quartered
    1 jalapeno, seeded & chopped
    1 medium onion, chopped
    2 cans or 4-5 roasted diced green chiles
    1/2 cup fresh cilantro, chopped

    Salt to taste.


Serve with tortilla chips or tortillas or over baked potatoes. Cheese and sour cream are also good.


Brown chicken. Add seasonings & broth. (I like to stick my immersion blender into this and really make it soupy.)

Put the rest of the ingredients through a food processor (or use your immersion blender) and add to the chicken mix.

Salt to taste.

Bring to a boil. Reduce heat and simmer for 45 minutes.

Serving Size: Makes about 6 1-cup servings
