Number of Servings: 8


    1 lb chicken breasts
    1 cup greek yogurt
    1 can condensed cream of chicken soup
    1/2 cup white wine
    2 cups crushed Ritz crackers (about 1 1/2 rolls of crackers)
    1/2 cup olive oil
    1 T poppy seeds


Preheat oven to 350 degrees.
Grease a 9 x 13 casserole dish and place chicken in the bottom.
Stir together the condensed soup, greek yogurt, and white wine.
Pour over the chicken.
Mix crushed crackers, olive oil, and poppy seeds.
Sprinkle the mixture over the casserole.
Bake for 30 minutes or until the top of the casserole is browned and the sauce is bubbly.
Serve over rice. Broccoli makes a nice side dish.

Serving Size: Makes 8 servings of poppyseed chicken, served over 1/2 cup cooked rice each
