    1/2 t. Olive Oil
    1 slice turkey bacon
    1/2 B sized red potato
    1 oz chopped raw onion
    1 oz chopped raw green bell pepper
    1 large egg
    1/2 oz no sugar added salsa


I like to enjoy 4 oz of peeled chopped oranges with this breakfast. It is a great nutritional complement to the dish.


Chop unpeeled potato, onion, pepper into small pieces. Cut turkey bacon into small pieces. Put olive oil in small skillet and turn on medium heat. Add turkey bacon and chopped veggies. Saute on medium heat for about 4 min, stirring to prevent burning. Move mixture to the edges of the pan and break egg into the middle. Break yolk with your stirring utensil and scramble to desired consistency. Mix all ingredients together and top with salsa. Salt and Pepper to taste.
