    1Tbsp active dry yeast
    1 tsp sugar
    1/2 cup + 2 Tbsp warm water
    1 1/2 cups + 2 Tbsp flour
    3/4 tsp salt
    2 tsp oil, for pan
    cornmeal, for pan and stone


I usually freeze half the dough for later use.


1. Stir the yeast and sugar into the warm water and let stand 10 minutes. Insert the metal blade in the food processor, put the flour and salt in the work bowl and turn the machine on. With machine running, pour the yeast mixture through the feed tube and process for about 45 seconds, until the dough pulls away from the sides of the bowl. Add a teaspoon of oil through the feed tube and process for 60 seconds longer. (If the dough sticks to the sides of the bowl, add more flour, 1 tablespoon at a time, processing for 10 seconds after each addition, until the dough leaves the sides of the bowl but remains soft.)
2. Divide the dough into 2 equal amounts and roll each out into a circle, rotating and turning the dough often and using enough flour that it doesn't stick. If the dough resists rolling, let it rest for a few minutes and try again.
3. Now you're ready to dress it, bake it, and enjoy.
