    1 cup diced potatoes
    1/2 cup chopped onion
    1/2 cup chopped green bell pepper
    1/4 cup sliced mushrooms
    3 TBSP of Bacon Bits
    1 1/4 cup of egg substitute (egg beaters)
    1/2 cup of skim milk
    1/4 cup of shredded cheese


Preheat oven to 325 degrees. Use cooking spray in an 8x8 baking dish. Layer potatoes at the bottom of pan. Pre-cook in microwave for 3 minutes to soften potatoes. Sprinkle onions, green peppers, mushrooms and bacon bits on top of potatoes. In a small bowl, whip the egg substitute with the skim milk. Pour egg mixture into the baking dish. Sprinkle cheese on top. Bake for 40 minutes. Cut into 4 squares and serve.
