Introduction

Soooooo good! With lots of grest veggies, my favorite quinoa, and great lemon flavor! Soooooo good! With lots of grest veggies, my favorite quinoa, and great lemon flavor!
Number of Servings: 8

Ingredients

    -1 cup uncooked quinoa

    -2 cups water

    -1/2 minced onion(yellow/red)

    -1 medium yellow squash/zucchini

    - 1 clove of minced garlic

    - 1 1/2 cups plain nonfat yogurt(opt)

    -zest of 1 large lemon

    -juice of that lemon

    -chopped squuezed spinach( 5 oz)

    - 1 egg

    - 1/2 tsp ground black pepper

    -1 medium carrot

    - 1 tsp baking powder

    -1 tsp olive oil(opt)

Tips

* these are very flimsy so flipping is a little hard, but the taste is great!


Directions

1. cook quinoa with water and combine all of the ingredients except olive oil
2. preheat oven at 400F(200 c)
3. put parchment paper over baking sheet and rub oil on paper(opt)
4. Flatten into about 4 inch cakes
5. bake 10 min and then flip over as best as possible and bake for 10 more minutee
6. comine yogurt and some lemon juice and serve on top( optional topping)
