    2 egg plants sliced long ways
    3 cups of mushrooms sliced, w/one cup set a side
    Peanut oil
    5 tomato's
    1 large can diced tomato
    italian season
    Garlic salt
    1/2 cup cheddar cheese, mozzarella and parmesean each
    1 sleeve Ritz Crackers


you will have 1/5 cups of cheese, split in half, and put half on the first layer and 1/2 on the top with the crackers. Delicious


slice egg plant and place on baking sheet as well as mushrooms. Brush lightly w/peanut oil and bake for 20 minutes for 350. while baking boil tomato's - take onions, 1 cup of mushroom and coppa and saute in a table spoon of peanute oil until soft and brown - take the boiled tomato's, peel and mash and add to the frying pan and add one can of diced and seasoned tomato. Add italian season a little sugar and garlic salt and cook about 15 minutes or until egg plant done. Then take a 8 x 10 pan, layer with sauce, then eggplant, mushrooms and some cheese, then layer again sausce, eggplant, mushroom and top w/sauce and then crush up the ritz crackers with the remaining cheese and top. Cover w/foil and cook on 370 for 20 minutes
