    2 cups peeled, chopped carrots
    1 cup diced onion
    2 tbs. olive oil
    2 tbs. dried basil
    1 qt low sodium chicken broth
    1/2 cup half & half
    12 oz can evaporated milk


In a large dutch oven, heat oil until it's shimmering. Sautee the carrots and onions until soft. Add basil and cook for two more minutes.

Add chicken broth and cook for 45 minutes.

Let soup cool, then puree with an immersion blender or in a blender. Return to pot and bring to a simmer. Add half & half and milk, stirring constantly. Heat until warmed through. Serve hot.
