    2 cups peeled, chopped carrots
    1 cup diced onion
    2 tbs. olive oil
    3 28 oz cans diced tomatoes
    2 tbs. dried basil
    1 qt low sodium chicken broth
    1/2 cup half & half
    12 oz can evaporated milk


In a large dutch oven, heat oil until it's shimmering. Sautee the carrots and onions until soft. Add tomatoes and basil. Bring to a boil and simmer for ten more minutes.

Add chicken broth and cook for 45 minutes.

Let soup cool, then puree with an immersion blender or in a blender. Return to pot and bring to a simmer. Add half & half and milk, stirring constantly. Heat until warmed through. Serve hot.
