    1tbs olive oil, 1 clove garlic diced, 1 small onion diced, celeriac root cut into cubes, 1 carrot peeled and cut into cubes, 0.25 leek sliced, 1 tin of tomato with herbs, 1 C vegetable stock, sprig of fresh diced parsley


Heat the oil in a pot. When hot cook the garlic and onion until soft. Add the other vegetables and cook for another couple of minutes. Add the tin of tomatoes and vegetable stock, bring to the boil and then cover and simmer for about 20 minutes or until the vegetables are soft. Add the prawns, cook for another 5 minutes and serve hot topped with parsley.
