Lemon Pancakes Lemon Pancakes

    1-1/4 c whole wheat flour
    2 tsp baking powder
    1/2 baking soda
    3 Tbsp Sucanat or brown sugar
    pinch nutmeg
    pinch sea salt
    1 cup low-fat milk
    1 cup low-fat cottage cheese
    1 egg yolk
    1 tsp vanilla extract
    1 tsp lemon zest
    3 egg whites
    cooking spray or oil to fry


Great with 1/4 c yogurt and strawberries, heated in the microwave.


Whisk dry ingredients - flour, bp, bs, sucanat, nutmeg and sea salt.
In separate bowl wisk - milk, cottage cheese, egg yolk, vanilla and lemon zest.
Combine wet and dry ingredients
In speparate bowl, beat egg whites until soft peaks form. Fold egg whites into batter - will be thick and lumpy.
Spray griddle or pan with oil. Use 1/3c batter for each cake. Cook 4-5 min, flip, cook additional 2 min. Repeat for all batter.

Serving Size: Yeilds 14 griddlecakes
