    4 medium Egg, fresh, whole, raw
    1/2 cup, chopped Broccoli, fresh
    1 medium Onion, chopped
    1 tsp Baking Powder
    60 grams Green Beans (snap)
    60 grams Peas, frozen
    60 gram(s) Flour Plain (Gluten Free Doves Farm)
    390 grams Clearspring, Tofu, silken, soft


Spray a pie dish with cooking spray, then cover the base with the broccoli, peas, beans and onion. Combine all the other ingredients in a bowl, mixing well. Pour mixture over the vegatables. Bake at 180C for 30-40 minutes or until lightly browned on top. Allow to stand for 5 minutes before serving with a mixed salad.

You can also use mushrooms, asparagus or left over veggies in this dish. Can be frozen but use within 1 month.
