    Broccoli, fresh, 0.5cup, chopped
    Peas, frozen, 60 grams
    Green Beans (snap), 60 grams
    Onions, 1 medium, finely chopped
    Egg, fresh, 4 medium
    Soy Milk, unsweetened, 2 cups
    Rice flour, white, 0.5 cup
    Baking Powder, 1 tsp
    Black pepper & salt to taste


Spray a pie dish with cooking spray, then cover the base with the broccoli, peas, beans and onion. Combine all the other ingredients in a bowl, mixing well. Pour mixture over the vegatables. Bake at 180C for 30-40 minutes or until lightly browned on top. Allow to stand for 5 minutes before serving with a mixed salad.

You can also use mushrooms, asparagus or left over veggies in this dish. Can be frozen but use within 1 month.
