    Red Ripe Tomatoes, 3 diced
    Garlic, 4 clove -2 peeled and 2 diced
    Olive Oil, 2 tbsp
    *Balsamic Vinegar, 1 tbsp
    Basil, 2 tbsp fresh chopped
    *Kosher Salt, 1/2 tsp
    Pepper, black, 1/4 tsp
    Shredded Parmigiano Reggiano, 2 tbsp
    Bread, french or vienna (includes sourdough), 5 slice, large (6" x 2-1/2" x 1-3/4")(remove)


Whisk together chopped garlic, vinegar, salt, pepper and fresh chopped basil. Slowly drizzle in oil. Add tomatoes and let sit at room temp for 20 minutes.
Toast bread in broiler. When toasted rub one side with whole garlic piece. Place bread on cookie sheet and tom with tomato mixture. Sprinkle on a little of the cheese, and Broil til cheese melts.
Serve immediately.

Serving Size: Makes 5 large pieces
