    3 cups All Bran
    1 cup water, boiling
    2 cups buttermilk
    2.5 cups flour
    1 tsp salt
    2 eggs, beaten
    2.5 tsp baking soda
    .75 cup splenda blend
    .25 cup chopped walnuts
    .5 cup banana puree
    1 Tbls Penzey's Baking Spice


Full size muffin is 2 servings.


Heat oven to 400 degrees. Grease muffin pan.

Pour boiling water over 1 cup of all bran. Mix splenda blend, eggs, buttermilk, remaining all bran, walnuts, and baking spice. Sift baking soda, salt, and flour together. Add to allbran/buttermilk mix. Add cup of softened all bran.

Mini muffins take about 10 min and full size take 17-20 depending on oven

Serving Size: Makes 48 mini muffins or 24 full size muffins.
