    1 egg
    1 C light tasting olive oil
    1 Tbsp lemon juice
    1 tsp dry mustard
    1 tsp pepper


mayo will have the same expiration date as the egg you use.


let egg and lemon juice come to room temperature for about an hour

in tall container, crack egg
pour olive oil into container
add lemon juice, dry mustard, & pepper
let everything settle for a minute or so

using a stick blender, begin pulsing and then steady blend for 30 seconds to a minute until you have the emulsion.

Serving Size: makes about a cup of delicious homemade mayo ( 16 Tbsp )
