    1 lb boneless pork loin cut in strips
    4 Tablespoon Cajun seasoning (see below)
    1 tsp canola oil
    1 red bell pepper diced
    1 tart green apple cored and chopped
    1/3 cup pecan pieces

    Cajun Seasoning: makes 1/2 cup

    3 T Paprika
    1/2 tsp cayenne pepper
    1 T garlic powder
    2 tsp oregano
    2 tsp thyme
    1/2 tsp salt
    1/2 tsp white pepper
    1/4 tsp nutmeg


Season pork strips with 2 T cajun seasoning. Toss remaining ingredients with 2 T cajun seasoning in separate bowl. Heat oil in non-stick pan over medium high heat and stirfry pork approx 3 min. Add reserved mixture and stir fry a few minutes more. Serve over brown rice.
