    1 lb. potatoes, cooked, peeled, and cut into chunks
    2 T extra virgin olive oil
    1.5 c chopped onion
    3 cloves chopped garlic
    12 oz. boneless, skinless chicken breasts, cut into chunks
    1 T each: ground cumin, paprika, curry powder, chili powder
    1 c chopped cilantro
    1 bay leaf
    1 c coconut milk
    2 c water
    salt & pepper to taste


Cook potatoes and set aside.
Heat oil and fry onions and garlic for one minute.
Add chicken and cook for three minutes.
Add spices and mix together.
Cook ten minutes.
Stir in remaining ingredients and simmer to reduce liquid.
Remove bay leaf!
