    10 T soy milk powder + 5 c water
    1/4 c tapioca starch
    3/4 t agar agar powder
    1/2 c soy yogurt, homemade & unsweetened or 1/2 sachet yogurt starter dissolved in a little water
    2 T sugar
    1/2 T vanilla extract


Whisk in saucepan 1/2 c soy milk, 1/4 c tapioca starch, 3/4 t agar agar, 2 T sugar, and 1/2 T vanilla. Whisk in 1 1/2 c soy milk more. Cook constantly stirring until thick and glossy. Whisk in remaining 3 c soy milk. Cool to about 115*F. At 115*F, whisk in 1/2 c soy yogurt or powdered yogurt starter dissolved in a little water. Incubate at 110*F for 10-12 hours. Refrigerate. It gets thick upon refrigeration.

If thicker yogurt is desirable, add 2 t xanthan gum after incubation, stir, let sit a bit.

Serving Size: makes 10 1/2 cup servings
