Ingredients

    *Chia Seed, 1/4 cup
    Coconut Milk, 3/4 cup
    *Brown Rice Syrup, 1 teaspoon
    Cinnamon, ground, 1 teaspoon
    *Almond Extract, 1/2 teaspoon
    Strawberries, fresh, 5 medium (1-1/4" dia)

Tips

You can leave this to sit out for up to 3 hours and the chia seeds will expand to about twice their size, or put it in the fridge after blending as I do, and it will thicken up a bit faster. Once made, you can leave it in the fridge up to 2 days, just leave it out about 15 minutes to take some of the chill out and reduce some of the gelatenous texture


Directions

there is no actual cooking necessary in this recipe. Simply slice up some strawberries, mix the ingredients, and if you'd like it to have that pretty pink color, toss it in a blender to mix some of the berries into the recipe. This also will give you a more consistent taste throughout, tho I also like to slice some whole berries right on top. Then place the bowl in the fridge to thicken while you clean up, and breakfast is served! This has a high fiber, potassium and protein content!
