    2 cups Quinoa (dry)
    1 package frozen broccoli
    1.5 cup shredded low-fat cheddar cheese
    1 cup unsweetened almond milk
    2 eggs
    3 cloves garlic
    4tsp brown mustard


Add Panko crumbs, red pepper, chicken, or parm cheese to taste (not factored in)


1. Preheat oven to 350 and spray casserole dish
2. Prepare quinoa according to box instructions.
3. Warm broccoli and garlic in saucepan until soft.
4. Mix milk, eggs and mustard in second bowl
5. Add veggies and quinoa into milk mixture.
6. Fold in shredded cheese.
7. Bake at 350 for 30-35 minutes.
