Something simple to do with left over meatloaf. Something simple to do with left over meatloaf.
Number of Servings: 6


    1.25 cups chopped mushrooms
    1.25 cups chopped peppers (red, green or yellow)
    1.25 cups chopped onion
    4.7 oz. meat loaf
    3 cups Egg Beaters
    .5 tsp cayenne pepper
    .5 tsp garlic powder


Add meatloaf cayenne pepper and garlic powder in a mixing bowl.
Saute mushrooms, peppers and onions in a pan.
Add mushroom/pepper mix to mixing bowl and toss to combine.
Separate .5 cup mix into 6 small baking dishes
Add .5 cup Egg Beaters to each baking dish
Bake in a 350 degree oven for 18 minutes.

Serving Size: Makes 6 individual 1 cup servings
