NOTE: Above list is what will be in the sauce to end. This list includes Garlic, which does not stay in, and pasta which is not a part of the sauce.
Pasta, I recommend one to three servings of whole wheat. But it's up to you, the sauce stretches very well. This is NOT included in the nutrition calculations
1 Tbsp, Olive Oil
1-2 Cloves of Garlic
1/4 Cup of Chopped Onions
1 Small - Medium Sized Tomato, or half of a Large Tomato
Directions
Begin by cooking the pasta by following the instructions on the box. Drain.
Chop the onions.
Cut the Tomato into small pieces, as I was taught. Alternatively, put large chunks into a blender, as I now do.
Put olive oil in a skillet or pot, over low heat. Immediately add the garlic (make sure that it's peeled).
Wait about 2-3 minutes and add the chopped Onion. Allow the onion to saute until it is cooked, but not brown.
Add tomato to the mix and allow to cook on Medium heat. If chopped cook until a smooth consistency is formed. (If blended cook until a thick consistency is formed.)
Add pasta. Mix and serve.
The size of the dish sauce is about the same size as the tomato used to make it. Since this varies it's difficult to declare how large the serving is.
Typically, I use this with 1/2 - 1 Cup of pasta. However, I have witnessed the same recipe doubled to cover a full box of cooked pasta.
