Very tasty and hearty stew, vegetarian friendly! Very tasty and hearty stew, vegetarian friendly!
Number of Servings: 12


    1 pound of Lentils
    1 can of Del Monte Petite diced tomatoes
    1 cup peeled, chopped carrots
    1 cup thinly sliced/chopped celery
    2 cups whole wheat rotini (or other pasta)
    3 cloves garlic
    1 tablespoon onion powder
    2 tablespoons of extra virgin olive oil
    11 cups reduced sodium, 99% fat free vegetable broth
    Salt, pepper, and crushed red pepper to taste


In a large pot, add the olive oil and heat to medium temperature. Add the garlic, carrots, and celery and saute until tender. Add the diced tomatoes with their juices. Let simmer until the tomatoes have broken down and some of the juices have evaporated. Stir occasionally throughout.

Add salt, pepper, onion powder and crushed red peppers to taste.

Sort and rinse lentils. Once veggies are soft, add the pound of lentils to coat them.

Add the broth and bring entire mixture to a boil. Then, reduce to medium low and simmer for about 20-30 minutes; until the lentils are tender.

Return heat to medium high to a high simmer, then add the pasta. Let simmer at medium low until the pasta is tender.

Makes at least 12 bowls of hearty soup. Use pepper flakes and/or grated Parmesan cheese as a garnish.
