    -Russet Potato, 150 grams (about 5 ounces) uncooked
    -Polar Tiny Shrimp (canned), 1 serving
    -California Blend Veggies (Broccoli, Carrots, Cauliflower), 2 cups
    -Kraft Mozzarella, Fat Free, 0.5 cup
    -Red pepper flakes, to taste


1. Cook veggies to desired liking. I prefer to steam mine on the stovetop, which takes about 10 minutes. They can also be boiled for approximately 5 minutes.
2. Meanwhile, wash potato to remove any dirt. Pierce repeatedly with a fork or knife.
3. Microwave potato on high for about 5 minutes, or until a fork can easily pierce the entire potato.
4. Remove potato from microwave and split open on a small dish (a flat-bottomed, shallow bowl works well).
5. Season potato with red pepper flakes. Top with .25cup of the mozzarella, then the tiny shrimp, then the cooked veggies.
6. Season the veggies with more crushed red pepper, if desired, then use remaining cheese to cover the veggies.
7. Place the loaded potato in the microwave for about 1 minute, or until the cheese melts.
