Number of Servings: 36


    Jelly (I prefer blackberry but you can use whatever you like or is in season. You will need 36 teaspoons)
    2 1/4c Flour
    1 tsp Baking Powder
    1/4 tsp Salt
    2 Sticks Unsalted Butter at room temp.
    1c Sugar
    2 Large Egg Yolks
    1 tblsp Lemon Zest
    1 tblsp Lemon Juice (freshly squized)
    1 tsp Vanilla Extract


Preheat oven to 350.

Combine Flour, baking powder, and salt. Sift.

Cream butter and sugar till light and creamy. Beat in Egg Yolks one at a time. Beat in Lemon zest and juice and vanilla extract.

Add dry ingredients one heaping spoonful at a time. Wait till combined before adding each spoonful.

Once all ingredients are added Pinch off dough to form 1 inch balls. Place on baking sheets spacing about 2 inches apart. Use clean floured finger to indent the tops of each cookie. Fill top of each cookie with 1tsp of jelly. Bake for aprox. 15 min. or until golden on edges.

Transfer cookies to cooling rack and let cool completely. Once cooled sift powdered sugar over the tops. About 1 tsp each cookie. Enjoy!
