A low fat, high fiber alternative to chili with meat! A low fat, high fiber alternative to chili with meat!
Number of Servings: 8


    1 large onion, chopped
    1 green bell pepper, chopped
    2 large carrots, sliced into 1 in chunks
    4 cloves garlic, minced
    2 16 oz cans chili beans
    1 16 oz can black beans, rinsed (low salt)
    2 16 oz cans diced tomatoes (low salt)
    2 - 4 T chili powder
    2 T ground cumin
    12 oz sweet potato, peeled and cut into cubes
    12 oz frozen corn
    salt to taste


Saute onion & bell pepper in olive oil until soft; add garlic and cook one more minute. Add all other ingredients and cook on med-low heat until sweet potato is soft, about 2 hours. Taste and adjust seasonings
