4 g of fiber muffins, still kid friendly. 4 g of fiber muffins, still kid friendly.
Number of Servings: 8


    .75 cup white flour
    1 cup whole wheat flour
    .25 cup wheat bran
    1 tbsp baking powder
    dash of salt
    1 large egg
    .75 cups milk
    .25 cups oil
    2 ripe bananas, mashed
    3 tbsp or a handful of chocolate chips.


Do not overmix.


Whisk dry together.
Whisk wet together.
Mix dry and wet together with a wooden spoon using only a few strokes. Stop while still a bit powdery and add in mashed bananas and chipits, then mix only a few more strokes until no powedery bits.
Drop into a 6 piece muffin tin (this is the only size that fits in my toaster oven). Put extra batter in any another mini-loaf pan.
Bake at 375 degrees, using convection heat, in toaster oven for 20-22 minutes.
Serving Size: 8 medium muffins
