    2 carrots, sliced
    2 celery stalks, sliced
    Small bunch of parsley, chopped finely
    2 medium onions, sliced/ diced
    2 cloves garlic, peeled and sliced
    1 3/4 pounds of sweet potato
    7 oz (1.5) chorizo sausage, sliced
    900 ml chicken stock
    Olive oil
    1heaped teaspoon curry powder
    Sea salt
    Freshly ground pepper
    1fresh red chile for garnish


you need an immersion blender!


After prepping all your veggies, measuring your ingredients, put the broth into a saucepan and heat until boiling.

Put on a large pan, on high heat and add two tablespoons of olive oil
Add all of your chopped and sliced ingredients with the curry powder and mix together with a wooden spoon
cook for around 10-15 mins, with the lid askew, until carrots have softened, onion is lightly golden
Add the boiling broth to the vegatables, stir it and then get it to a boil.
Reduce the heat and simmer for 10 more minutes

Season with Salt and pepper, using the immmersion blender or even a blender that can handle hot liquids, pulse until smooth
If you like, scatter that red chile on top of each serving.
