    1 lb Jennie-O Lean Ground Turkey
    5 c finely chopped Mushrooms, fresh
    1 c finely chopped Green Peppers (bell peppers)
    1 c finely chopped Red Onion
    4 oz can green chilies
    2 T Chili powder
    1 T chopped Garlic
    1 1/2 t Salt
    1 t ground cumin
    1/4 t Pepper, black
    2 T Cornstarch


Add all ingredients except cornstarch to a crock pot. Mix thoroughly, breaking up the ground turkey.

Cover and cook on high for 3-4 hours or on low for 7-8 hours, until turkey is fully cooked.

Turn crock pot to low. In a small bowl, stir to dissolve cornstarch in 2 T cold water. Stir mixture into the contents of the crock pot.

let sit, uncovered, until slightly thickened, about 10 minutes.

Serving Size: makes 6 servings of 2/3 cup

  • I made with Organic lean beef and substituted Ortega Chipolte taco mix for the seasonings. It's so good you can't tell it is mostly mushrooms. Thanks for adding to the recipes on SparkPeople! - 1/16/13
