Introduction

Ingredients

    350g chicken breast (other cuts are ok but not as lean) diced, 1T olive oil, 1 onion roughly diced, 3 cloves garlic roughly diced, 1 inch ginger diced, 1 star anise, 5 cloves, 1 bay leaf, 4 chillis diced (feel free to add more)3 stalks of celery thickly sliced, 2 large carrots thickly sliced, 3 T soy sauce, 6C chicken stock/broth

Directions

1. Heat the oil in a large pot. Once hot add the onion, garlic, ginger and chilli and cook until onion has softened
2. Add the chicken and cook until sealed (i.e. the outsides are white).
3. Add the carrot and celery and cook for a minute
4. Add the broth, star anise, cloves and bayleaf. If you like your soup hotter then add some chilli flakes to the soup now.
5. Bring to the boil then reduce to a simmer - simmer for ~45 min covered
6. Add the soy sauce and shallots.
7. Serve hot.
