Number of Servings: 17


    6 TB low-fat milk
    5 egg whites
    10 TB applesauce
    1 t vanilla
    2 cups whole wheat flour
    1 t baking powder
    1/2 C sugar
    1 t cinnamon
    1/2 C chocolate chips
    2 bananas, mashed


I used frozen bananas for a sweeter flavor so you could cut back on the sugar. If you use an unsweetened applesauce that would help the calorie count but that was all I had on hand. You can add nuts if you want or switch the chocolate chips for nuts.


Grease muffin pan. Preheat oven to 400 degrees. Place milk, egg whites, applesauce and vanilla in a bowl and whisk until combined.
Sift flour and baking powder into a separate bowl. Add the sugar, cinnamon and chocolate chips to the flour mixture and then stir to combine.
Slowly stir in the milk mixture but do not beat.Fold in the mashed bananas.
Use an ice cream scoop to put batter into muffin pan. Bake for 17-20 minutes until golden and toothpick comes out clean. Cool on wire rack.
