    beef brisket 3 lbs.
    32 oz. tomato juice (or V-8)
    salt and pepper
    flour and water to thicken


Preheat oven to 375. Chop garlic and combine with salt and pepper. Rub over brisket, and place into a roasting pan. Chop carrots and celery and place over and around brisket. Slice onions and place over and around the other vegetables and meat. Pour tomato juice over everything and tightly cover with foil. Bake 3-4 hours. Remove meat and vegetables from pan. Place pan on stove top over medium flame. Add a little flour mixed with water to pan and mix well, let it simmer until thick. Slice brisket and place on a platter with vegetables. You can either pour gravy over the top, or serve separately.
