    2 C. shredded hash browns (I use Inland Valley simply shreds), seasoned to taste
    2 Tb. butter, melted
    6 eggs
    1 cup evaporated milk
    1 cup cheddar cheese, shredded
    1 cup mozzarella cheese, shredded
    1 cup lean ham, diced


Spray a 9x13 pan with non stick cooking spray. Cover the bottom of the pan with the hash browns. Pour the butter over the top of the hash browns. Bake at 400* for 10 minutes.
Mix the eggs, cheese, milk, and ham. Pour mixture into pan with hashbrowns. Cover. Bake at 350 for 30 minutes. To make sure it is done, stick a knife in the middle, if the knife comes out clean it is done. Cut into 12 pieces!
