    1/2 cup uncooked organic quinoa
    1-2 cups chopped broccoli and cauliflower
    1 clove garlic, minced
    1 can chickpeas, drained and rinsed
    1 tsp dijon mustard
    1 tsp tarragon
    1 tbsp lemon juice
    2 tbsp extra virgin olive oil


This recipe is great on its own, but would also be lovely on a bed of baby spinach, or wrapped in lettuce or a tortilla.


Cook quinoa according to package directions. While it cooks, cook your broccoli/cauliflower.

Put cooked quinoa into a medium-sized bowl. Add garlic, and stir. Add chickpeas and tarragon, and stir again. Add dijon, lemon juice, olive oil, and stir until ingredients are incorporated evenly. Add vegetables and stir until combined.

Season with freshly ground pepper and sea salt to taste.
