    1 Boneless Skinless Chicken Breast
    2 Tbsp Olive Oil
    1 Garlic Clove
    3 Qts or 12 Cups Water
    1 Bay Leaf
    3 Large Potatoes
    3 Large Carrots
    2 Cups Cabbage
    4 Celery Stalks
    2 Tbsp Soy Sauce
    1 Tsp Pepper
    1/2 Tbsp Onion Powder
    1 Tsp Pepper
    1 Tsp Chicken Bouillon
    1/2 Tsp Oregano/Mexican Oregano
    3 Tbsp Tomato Sauce/Enchilada Sauce


You can switch out the tomato sauce for enchilada sauce and the oregano for mexican oregano. For a mexican twist on the recipe.


Chop all the Vegetables and Chicken into bite size pieces
Set Potatoes and Carrots aside
Set Cabbage and Celery aside
Heat Olive Oil in a large pot, Add Grated Garlic and Chicken give a stir and cover with lid
Let cook for 10 min then give a stir
Add Water, Bay Leaf, Potatoes and Carrots
Simmer on Low for 1 hour
Add Soy Sauce, Pepper, Onion Powder, Chicken Bouillon and Oregano
Let simmer for 30 min
Add Tomato Sauce
Let simmer for another 30 min
