Makes a great lunch or take out the meat and serve as a side dish. Makes a great lunch or take out the meat and serve as a side dish.

    .5 cup Edamame Fresh or thawed frozen
    .25 cup sliced red bell pepper
    .25 cup sliced green bell pepper
    .25 cup thinly sliced red onion
    2 oz shaved deli smoked ham (can substitue smoked turkey)
    2 tsp rice vinegar
    2 tsp extra virgin olive oil
    1 tsp garlic powder
    salt and pepper to taste


Combine all ingredients in a bowl and mix well together. Can eat right away or chill and eat later.
