    2 c quinoa
    1 c feta
    1 c walnuts, toasted and chopped
    2 c kale
    15 oz can garbanzo beans, drained and rinsed
    2 T fresh thyme, leaves removed and chopped
    2 T olive oil
    salt and pepper to taste
    juice of 2 lemons


Cook quinoa according to pkg directions. While quinoa is still warm, combine with feta, walnuts, kale, garbanzo beans, thyme, olive oil, salt and pepper. Toss with fresh lemon juice.

Serving Size: makes 8 servings
