    1 1/4 cups white sugar
    1 cup all purpose flour
    1 cup whole wheat pastry flour
    2 tsp baking powder
    1 tsp baking soda
    2 tsp ground cinnamon
    1 tsp ground nutmeg
    1/4 tsp fine sea salt
    1/2 cup canola oil
    1/2 cup nonfat milk
    1 large egg
    3/4 cup unsweetened canned pumpkin
    1 tsp vanilla extract
    1 15 oz can low/no sugar canned pears
    1/2 cup chopped walnuts (optional)


May need to add 10-15 minutes more, depending on your oven! Make sure to check the bread after the allotted time.


Preheat oven to 350 and coat a 8 or 9 inch loaf pan with cooking spray.
Whisk together flours, sugar, spices, salt, baking soda and powder in a medium bowl, then set aside.
In a separate bowl, whisk together oil, egg, milk, vanilla, pumpkin and nuts (if using).
Fold flour mixture into wet mixture and stir until just combined. Drain pears and chop into small chunks. Add to mixture and stir gently.
Spread batter into prepped pan and bake for 45-55 minutes or until center is set.

Serving Size: Make 1 9inch pan of bread
