Ingredients

Egg Whites- 3
Cottage Cheese- 1/4 cup, drained
Fresh or Dried Dill to taste (Fresh is best, about 1tbsp. fresh, or 1/2tsp. dried)
Fresh Parsley- 1tbsp. chopped, or to taste (Use 1/2 tsp. if using dry)
Raw Onion- 1tbsp.
Tomato- 1/4cup chopped
Butter Spread- 1/2tbsp.
Tips
Fresh basil can be substituted for the dill.
Directions
1. Preheat 10 inch fry pan on medium. While pan is heating, combine chopped vegetables, parsley and fresh or dried dill to make a chunky salsa
2. Lightly beat egg whites
3. Add butter spread to pan, and melt
4. Add egg whites
5. When egg whites have settled, gently spoon cottage cheese on 1 half of the omelette.
6. Fold omelette over, and cover. Turn off heat and let sit on burner for an additional few minutes to finish cooking
7. Spoon salsa on top of omelette
8. Add salt and pepper to taste
