A lower fat/calorie version of a enchilada recipe my friend taught me years ago. A lower fat/calorie version of a enchilada recipe my friend taught me years ago.
Number of Servings: 16


    1 lb extra lean ground turkey
    16 white corn tortillas
    1 can healthy request cream of mushroom soup
    1 can healthy request tomato soup
    1 can Gebhardt enchilada sauce
    1 cup 2% shredded cheddar cheese


Cook ground meat. Mix soups and sauce together in big bowl. Place meat in tortilla with a little sauce roll up and repeat with rest of tortillas. Pour rest of sauce over rolled enchiladas. If I dont use all the meat in the enchiladas I put the rest on top and cover with sauce. Then top all the sauce covered enchiladas with the cheese and bake at 350 til heated through 20-30 min. MAkes 16 enchiladas.
