Ingredients

6 eggs
1 c. milk (1%)
1 cup low fat cheddar cheese
1 package Shadow Brook Farms Turkey Sausage (hot) (6 sausage links), sliced into 1/2 inch slices
1 med onion, diced
1 cup chopped broccoli
1/2 package, fresh baby spinach leaves
2 tbsp of olive oil
1 tbsp oregano
Directions
pre-heat oven to 350
heat olive oil to medium
add onions, stirring for 1 minute
add broccoli, stirring for 1 minute
add turkey sausage, still stirring for an additional minute
add spinach, stirring until spinach "wilts"
remove from heat
in small bowl beat eggs with milk, orengano, and 2/3 cups of the cheese, (leaving 1/3 c. of the cheese aside)
spray a casserole dish with pam
spoon the sausage and vegetable mixture evenly in casserole dish
pour egg mixture over top
sprinkle last 1/3 c. of cheese over the top of the egg mixture
Cook uncovered for 30 minutes
Makes 6 generous servings
