    2 lbs chicken breast, cubed
    1 packet fajita seasoning mix
    2 Tbsp oil
    1 medium onion, chopped
    1 red pepper, diced
    1 14.5 oz can of Fire roasted tex mex style diced tomatoes
    1 15.25 oz can of black beans, rinsed and drained
    2 Cups minute rice
    1 Cup water


Serve with tortillas or taco shells, top with sour cream and shredded cheese.


Prepare fajita mix according to package directions and marinate chicken for 15 minutes. Dice pepper and onion. Over medium high heat cook chicken and fresh vegetables in skillet for 7-8 minutes. Add diced tomatoes, black beans, rice and water. Simmer on medium heat until liquid is absorbed and rice is tender.
