    Chicken breast boneless skinless
    Bell Peppers
    Black Pepper
    Red Wine
    Diced Tomatoes


Halve squash and scoop out seeds and pulp, place in microwave safe dish with 1/4 cup of water, and cook for 10 minutes. Meanwhile, brown peppers, shallots and garlic in 2 tsp EVOO. After a few minutes, remove veggie mixture to bowl and add chicken to pan. Brown quickly and cook through, about 5 minutes on each side of a thin sliced breast. Put veggies back in the pan and add diced tomatoes. Add wine & reduce to desired thickness. When squash is done, use a fork to rake spaghetti like strands out in a bowl, plate squash, then add chicken and veggie sauce mixture on top. Top with parmesan if desited!
