    one cup sugar
    one cup boiling water
    one cup black currant juice
    one packet unflavored gelating (optional)


If the mixture gels overly when cooling, just remix it in a food processor or blender before freezing.


Add sugar and gelatin to boiling water, Mix thoroughly.
Add fruit juice, mix thoroughly
Refigerate for several hours.
Place in an ice cream maker and freeze per standard directions. Recipe makes about 1.25 quarts of finished product.

Serving Size: Based on one ounce units, a serving is two to three ounces
