    3 - 4 boneless chicken breasts
    (2 T olive oil)
    2 - 3 c sliced zucchini
    (Salt and pepper to taste)
    14 oz can chopped tomatoes
    2 medium tomatoes, seeded and chopped
    1 bunch fresh basil, chopped
    1 c Parmesan, or goat cheese
    1 lb box whole wheat spaghetti


Boil chicken breasts for 20 - 25 minutes, or until cooked through. Shred chicken. Heat olive oil in skillet. Add zucchini; season with salt and pepper. Cook until crisp-tender, about 6 - 8 minutes. Add canned and fresh tomatoes, chicken and basil. Simmer, stirring occasionally, for 20 minutes. Add cheese; season with salt and pepper. Cook for an additional 2 minutes. Cook pasta according to package directions. Toss with zucchini sauce.
