    (2 t olive oil)
    ¾ c diced red onion
    (1½ t ground cumin, divided)
    (½ t chili powder)
    2 red bell peppers, chopped
    3 ears corn, removed from cob, OR frozen if
    fresh is not available
    15 oz can black beans, rinsed and drained
    14 oz can tomatoes with green chilies, drained
    1 jalapeño pepper, seeded and chopped
    12 whole wheat tortillas
    1/2 cup Fat Free Sour cream
    1 c Monterey jack cheese


Preheat oven to 300° F. Heat olive oil in skillet and add red onion. Cook for 3 - 4 minutes or until soft. Add 1 t cumin, chili powder and peppers. Cook for an additional 3 minutes. Stir in corn and cook an additional minute. Stir in black beans, tomatoes and jalapeño. Cook an additional 2 minutes. Place tortillas on a baking sheet. Place vegetable mixture on center of tortillas. Fold over and tuck in ends. Whisk sour cream and ½ t cumin together. Place burritos fold side down. Top with 1 T sour cream mixture and 1 T Monterey jack cheese. Warm burritos in oven for 5 minutes.
