Beet salad that is good for lunch Beet salad that is good for lunch
Number of Servings: 1


    Beets, boiled, 1 cup slices
    Blue Cheese, .5 oz
    Pine Nuts, 1 tbsp
    Salt, 1 dash


Bake the beets night before.


Wrap one or two beets in the foil. Bake them for 60 minutes in the oven (I usually bake them the evening before tomorrow’s lunch). Leave the beets until cool. Grate or cut the beets, add crumbled Blue Cheese, pine nuts, salt to taste (I don’t add any) and olive oil. Mix the salad and enjoy.
