    if you're cooking for 2-3 people:

    3cans black beans, rinsed and drained
    2 can sweet corn, rinsed and drained
    2 can rotel, drained
    1/2 tsp Cumin
    1 tsp Cilantro

    tortillas of choice, cheese, and other taco stuff you like on tacos (guac, sour cream, whatever)


my older sister and brother like to add a bit of chicken, but i like it just the way it is. more protein and fiber and less fat when you do it sans meat! :)

if you're cooking for a larger crowd (6-8), add 1 more can of black beans.


once you have the beans and stuff drained and rinsed, put in a big pot. pour just enough water in to cover the beans and corn and tomatoes. bring to a boil. boil for 5 minutes, then turn to simmer. You can let it simmer for 10 minutes, 20 minutes, 30..(we've even done it for 45 minutes before)

drain excess water jusst before serving. spoon with slotted spoon into tortillas and top with various toppings. enjoy!
