*note: This recipe can definitely be scaled down. The original batter was designed for only 8 dogs but it makes WAY too much. I think by making the entire recipe you could easily stretch it to 28 dogs!

4 packs of Hebrew National 98% fat-free beef franks (they come in packs of 7)
2 boxes Jiffy Corn Muffin Mix
    1 cup All-Purpose Flour
    1/2 cup egg beaters
    1/2 cup smart-balance light
    3/4 cup fat-free milk (I use lactaid)

cumin, cayenne, and chili powder to taste

mix all ingredients except for the hot dogs in a bowl.

It will look like sticky biscuit dough

Coat each dog in batter- no more than 1/4" thick (batter will just run off the dog if too thick) and lay on a non-stick baking sheet

You'll probably have to use your fingers to get them completely coated.

Bake for about 12-15 minutes or until desired shade of brown
Serve with your corn-dog favorites and probably a fork!

  • I did exactly what you said, making 1/4th of the recipe for an 8 pack of fat-free turkey hot dogs, and the recipe was the perfect amount! I just made these for New Year's Eve with my health conscious family, and they were a BIG hit! - 1/7/10
